A PEPPER, A PLACE

Born of fire, raised by patience.

Two hundred kilometres north of Douala, the Penja Valley sits at the foot of a sleeping volcano. Its mineral-rich, ash-laden soil gives our pepper its singular fragrance and pearl-white finish.

Each peppercorn is hand-picked at perfect ripeness. The berries are soaked, removed from their outer husk, washed, and then dried in the sun. The result is a chef's pepper of unmatched clarity and warmth.

THE PEPPER, THE PLATE
IN THE KITCHEN

A finishing pepper, not a background note.

White Penja pepper is added at the very end, off the heat, so its perfume survives. Try it over burrata, on a veal jus, or through a vanilla custard.
